I only made these as my wife was pregnant and they satisfied a craving.

Changes made to the recipe:
Potatoes – 2 Lbs.
Vinegar – ¾ cups
Olive Oil – 1 ¾ of 17 Oz bottles of olive oil (3-4 inches in a deep frying pan).

Prep Time = 20 minutes.
Cooking Time = 15-20 minutes for each batch of potato chips i.e. one layer in the frying pan. 10 minutes for one side, flipping them over after 10 minutes. Promptly remove when they turn golden brown as shown below.
Benefits:
Olive Oil is the healthiest of cooking oils.
There are no preservatives in this meal.
You can skip the salt or add salt later as you please.
Cons:
Uses a lot of oil which can be expensive for a small batch of potato chips.
Uses a lot of paper towels in order to dab the chips to remove excess oil.
High in Calories.
